Special Touch
The lime zest is the decisive twist: its acidity lifts the ham's aroma without masking it. Together with the cool burrata, the whole becomes light and summery.

The Story
The Cebo is the everyday ham — and there is no reason to be shy about it. It comes from the same Iberian pig as its big brother, simply fed grain rather than acorns. That makes it more approachable, but not one bit less crafted.
Background
Cebo ('fattening') denotes Iberian pigs raised on grain and legumes — without the traditional Montanera in the oak forest. The breed is the same as Bellota, but the lifestyle differs fundamentally, so the marbling is less pronounced and the flavour milder. The 18-month ageing is regulated by Spanish law (RD 4/2014).
