Decadence with a wink. "Eat The Rich" is the statement piece of the summer collection — and it looks like a small sculpture. The Italian truffle ham is draped into a rose whose folds carry the earthy, almost dizzying scent of black summer truffle into every layer. Beneath it lies the red plum: dark, juicy, with a wine-like sweetness and exactly the acidity that cuts through and grounds the truffle's oily depth. The single blueberry on top is no accident — its cool, tart-sweet burst sets the final aromatic accent and brings an almost perfumed freshness to the finish. Visually a crown, on the palate a slow sinking into luxury: earthy, dark-fruited, velvety — a bite that deliberately wants too much, and works precisely because of it.
A wedge of red plum as the base, drape the truffle ham layer by layer into a rose and set it on top, a single blueberry in the centre of the rose. Ham at room temperature.
