The Story

A shot of summer that wakes you up. The Tuscan fire-cured ham is the provocation on the plate: coarser in the cut, bolder in salt, with that peppery, almost wild crusted-pepper character that makes Tuscany so unmistakable. Against this spice the pineapple lays its juicy, tropical foundation — acidity and sweetness in one, with enzymes that genuinely cleanse the palate. The raspberry on top is the bright spark: its fine acidity and perfumed scent shoot straight through the ham's spice and make everything bloom.
